Local Delicacies

The fruits of the ocean and the arctic conditions, which ripen plants and berries at a slower pace, make Varanger and ideal area for those interested in new culinary experiences. When you have tasted some of our local delicacies, you will realise that this is indeed something very special. Our culinary traditions are influenced by our history, climate and the natural production methods we use.

Things you will find on the menu in our region are based on raw foodstuffs from Varanger. There are many different kinds of reindeer meat, king crab, lamb, prawns, salmon, rainbow trout and arctic berries, and all of these are used in local dishes. How about a reindeer fillet with fresh mushrooms, baked potatoes and a sauce made from sherry vinegar and onions?

Our seafood is also amongst the best in the world. Is there anything as simple and good as freshly-caught prawns? Or you could try king crab, our own Varanger speciality. The king crab season runs from October through to December, and in October there is even a king crab festival in Vadsø. But these crabs are not alone in the Arctic Ocean. Cod, coley, halibut and salmon are plentiful and of the absolute highest quality. All of these can be cooked, baked or smoked and served with interesting side dishes.
